Now that you have a Date and a Guest List, it will be pretty easy to filter out and short list some churches and venues based on it's capacity. Some guidelines in choosing the venue:
1. Location (Church/Venue)- will it be easily accessible to family and friends of both sides? Of course nobody's stopping you from marrying in a galaxy far far away but do consider the people you want in your wedding day. Will they be able to join you if you chose that location?
2. Location (Church/Venue/Prep)- again for the ceremony and reception. If you'll have a Christian wedding then this won't be a problem since ceremony and reception can be done in the same place. But if you're catholic, they require you to have a wedding in a church and you certainly cannot hold the reception at the church. So the venues for the church and reception should be quite near to each other for you and your guest' convenience. The preparation area/hotel can be somewhere in between.
3. Date (Church)- Most churches do not accept Monday weddings! Because Sundays are usually busy and Monday is kind of their rest day and general cleaning for churches. Some churches don't allow Sunday weddings too so you'll have to inquire for this when choosing a church.

5. Corkage (Venue) - some venues have corkage for non-accredited suppliers like catering, lights&sound and photographers. Some venues offer a holistic package which means they can provide you everything you need from venue to catering to styling to photos and videos, emcee, lights&sound everything. but it also means if you just want to rent the venue, corkage applies to the rest of the suppliers you won't book from them.

Ingress/Egress/Event Time (Venue) - Ingress is the time your suppliers have to setup everything at the venue, Event time is the actual time you can spend at the program and Egress is the time your suppliers have to pack up. Event time is usually 4-5 hours. Ingress is 2-3 hours and Egress is 1-2 hours. You'll have to ask this as well.
7. Payment Terms (Church/Venue) - most suppliers require a deposit to block the date and the full payment comes a month or a few weeks before the wedding.
